I need to remove coatings from masonry on a historic-preservation project. What are my options for doing so without damaging the mortar joints?

We had a similar issue and found that a troweled-on paint remover with a wax paper topping ( keep paste from drying out and also used to remove residues) worked the best without altering substrate. There may be sprayed-applied removers that also work.
