What is the best way to prevent tropical hardwood deck lumber like ironwood from developing a gray patina in sunlight?

You don't. You let it gray out naturally and enjoy extremely low maintenance. If you decide to try and keep the deck from graying, it will be an up-hill battle that will include recoating very frequently with a long oil. The better option, if you wish to maintain color, is to use a different type of wood that is still fairly rot-resistant, such as cedar.
